2020 Sin Cera

Hand harvested and destemmed to tank with 3 days of cold soak to extract deep colour. The wines were fermented separately and pressed off 20 days after initial processing. Once racked off heavy lees the wines were blended and left to spontaneous ML conversion in the following spring.  The blend aged in predominantly French and a small portion of American Oak for 2 years prior to bottling.

This wine will cellar well for 10 years.
