Hand-picked and destemmed into ferment vessels. The grapes had two days of cold soak to extract colour before fermentation commenced. Because of the ideal growing conditions, the wine structure enabled us to press 21 days after our initial processing. Malolactic conversion was spontaneous and fully completed the following spring. The wine rested with French Oak for 18 months prior to bottling. Our oldest vines, some only 5 metres from the Century Block vines, continue to allow us to attempt world class Pinot Noir.
